I can't say how the MP is, as I haven't played TMT that much, to be completely honest.
TMT has the most "next-gen" graphics and has 4 environments and over 200 tracks. The TM2 games do have slightly better graphics than TMUF (which isn't to say TMUF looks bad by any means). TM2 Stadium, Canyon, and Valley are three separate games, containing their respective environments. The MP base is still pretty decent on TMUF, but TM2 Stadium has a better MP base. TM United Forever Star Edition has the most content overall (the Steam Store page says it has over 420 unique tracks) with 7 environments (Stadium, Island, Desert, Bay, Coast, Snow, Rally) and loads of official tracks in many different playlists (United, Star, etc.) TMUF also has different gamemodes like Puzzle, Obstacle, and Stunt.
